Ingredients
- 16 large eggs
- 1 pound pork breakfast sausage
- 1 cup shredded cheddar cheese (about 3 ounces)
- 8 large flour tortillas
- 1 teaspoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
1. Prepare the Eggs and Cheese
Shred the cheddar cheese and set it aside. Crack the eggs into a large bowl and whisk until the yolks and whites are fully combined.
2. Cook the Sausage
Heat a large skillet over medium heat and add the olive oil. Add the sausage, breaking it into small pieces as it cooks.
Stir frequently and cook for approximately 10 minutes, or until the sausage is fully cooked and browned. Transfer it to a paper towel-lined plate and set aside.
3. Scramble the Eggs
Remove all but 1–2 teaspoons of the sausage grease from the skillet. Swirl the remaining grease around to coat the bottom of the pan.
Pour in the whisked eggs. Let them sit for about 10 seconds, then sprinkle in the salt, pepper, and shredded cheddar cheese.
Using a spatula, gently push the eggs from the edges of the skillet toward the center, allowing the uncooked egg to spread across the pan. Continue folding and stirring until the eggs are softly scrambled.
Tip: Avoid overcooking the eggs, as they may become watery when reheated.
4. Soften the Tortillas
Place the tortillas on a microwave-safe plate, separating every two tortillas with a damp paper towel.
Microwave for approximately 20 seconds to gently steam and soften them, making them easier to roll.
5. Assemble the Burritos
Lay one tortilla flat. Add a heaping ½ cup of scrambled eggs just below the center of the tortilla, then top with approximately ⅓ cup of cooked sausage.
6. Roll the Burritos
Fold the sides of the tortilla inward toward the center. Fold the bottom edge up and tightly over the filling, then continue rolling until the burrito is securely wrapped.
Repeat with the remaining tortillas and filling.
7. Serve or Store
Enjoy the burritos immediately, or wrap them individually for easy meal prep.
Optional: Crisp the Outside
For an extra crispy and delicious finish, lightly grease a skillet and heat it over low heat. Place the burrito in the pan and cook gently until golden brown. Turn it to brown each side, creating a warm, crispy exterior.
Customize your burritos: Add extra fillings such as cooked rice, sautéed peppers, onions, or your favorite toppings for even more flavor.
