Classic Fluffy Pancakes
These fluffy homemade pancakes are light, tender, and incredibly easy to make. A splash of apple cider vinegar gives the batter a subtle tang and helps create soft, fluffy pancakes with beautifully golden edges. They’re perfect for a cozy family breakfast and can be topped with fresh fruit, butter, maple syrup, or your favorite toppings.
Ingredients
- 1¼ cups all-purpose flour
- 2 tablespoons granulated sugar
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- ¼ teaspoon kosher salt
- 1¼ cups whole milk, at room temperature
- 3 tablespoons unsalted butter, melted and slightly cooled
- 1 large egg, at room temperature
- 1 tablespoon apple cider vinegar
Instructions
1. Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
2. Prepare the Wet Ingredients
In a separate bowl, whisk together the milk, melted butter, egg, and apple cider vinegar until smooth and well combined.
3. Make the Batter
Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until everything is just combined. A few small lumps are perfectly fine. Avoid overmixing, as this can make the pancakes less fluffy.
4. Cook the Pancakes
Heat a nonstick skillet or griddle over medium heat and lightly grease it with a little oil.
Pour approximately ¼ cup of batter onto the hot pan for each pancake. Cook for 1–2 minutes, or until bubbles begin to form on the surface and the edges look set.
Carefully flip the pancake and cook for another 1–2 minutes, until golden brown and cooked through.
5. Serve
Serve the pancakes warm with butter, maple syrup, fresh berries, bananas, or your favorite toppings.
Helpful Tips
Milk options: You can use different types of milk depending on what you have available. Whole milk gives the pancakes a richer flavor, while reduced-fat or plant-based milk can also work.
Quickly warm your milk: If your milk is cold, microwave it for about 20–30 seconds to bring it closer to room temperature.
Quickly warm your egg: Place the egg in a bowl of warm water for about 5 minutes before using.
Don't overmix: Keeping a few lumps in the batter helps prevent dense, chewy pancakes and keeps them light and fluffy.
